Good bodied and round, this Italian Chardonnay is intense with hints of honey and vanilla, due to the fermentation in barrels.
Since 1949 Cantina Colli Euganei has aimed to preserve the indigenous grapes and the quality on the production. This is the result of over 600 winemakers of the area who worked together.
The grapes for this special selection come from the south-west area of the Euganean Hills, Veneto where the soils are stonier and shallow. In addition to their higher sugar content, the grapes have a greater concentration of substances that enhance the body of the wines made. This wine also remains a long time in the consumer’s memory after tasting. Its intense fragrance and roundness provide absolute pleasure when drinking it. 100% Chardonnay, during harvesting, selected grapes are hand-picked in the first week of September. The crushed grapes are macerated for 3-4 hours at 10°C. Then the must is fermented in 500-litre French oak barrels. It is then poured into stainless steel tanks and bottled in the months of March-April. Bottle aging takes about 3 months at a constant temperature of 15°C. Golden yellow, intense aroma with hints of honey and vanilla. A full and warm taste with a distinct and well-balanced body, and a persistent aftertaste. Ideal at 12°C as an accompaniment to filled pasta dishes or risottos with fish, shellfish or crustaceans, and mature cheeses.
